There is one resolution that I make every New Year: to learn new things. As 2013 begins, the first thing I did in order to accomplish this goal was to register for a course at Coursera. My class is called The Science of Gastronomy.

Coursera is a platform that has partnered with the world’s best universities to offer free online classes for anyone who wants to learn. The Science Of Gastronomy is taught by two professors from Hong Kong. Dr. King L. Chow is a Professor of Life Science and Biomedical Engineering at The Hong Kong University of Science & Technology. Dr. Lam Lung Yeung is the Project Manager and Adjunct Associate Professor in the Department of Chemistry at HKUST.
They will teach this course via YouTube, with segments that will last an average of ten minutes each. I will need to try out the experiments they demonstrate in my own kitchen, and then record my results. It would have been fun to be required to film myself conducting the experiments. What a great icebreaker it would be with my new online classmates if they could see my misadventures in the kitchen, and I theirs!
This class will address food preparation, flavor, aroma, coloring, and nutrition. My fellow students will be from all around the world. I can’t wait to exchange ideas with and learn from all of them!
